A wonderful and simple side dish that can be made ahead
and served at room temperature. Roasting caramelizes the
sweetness of the squash and enhances the flavor.
Ingredients
3 ½ pounds butternut squash, peeled and cubed 1/2"
2 tablespoons olive oil
¾ teaspoon salt
¾ pepper, ground, black
1 tablespoon garlic, minced
2 tablespoons flour
1 cup parsley, chopped
Directions
In a bowl toss cubed squash with olive oil, garlic, salt and pepper.
Add flour to the squash and toss well to coat
Place squash into oiled shallow baking pan, drizzle with more olive oil
Bake covered at 350' for 30-40 minutes. Remove cover and bake until lightly browned
