Avocado Salad Dressing

This is a hit every time we serve it!  Perfect with crisp romaine.  It also makes a great dip!

Ingredients:
4 Haas Avocados (meat only)
2 Lemons (juices only)
2 Shallots, minced
2 Roasted Red Peppers (seeded and peeled)
1 tbsp. Dijon or Stone Ground Mustard
Olive Oil to emulsify

Directions:

Combine first 5 ingredients in food processor, while blending, add olive oil until desired consistency.  Finish by adding salt and pepper to taste.  Enjoy over your favorite salad greens!
