Carrot Salad, Grated

The lemon juice sparkles in this refreshing salad -- and the coconut oil is a delicious twist.

Ingredients:
4-5 medium size Carrots, washed (and peeled, if you prefer)
juice of 2 lemons
1 teaspoon  salt
1 - 2 tablespoons coconut oil

Directions:
Grate carrots, coarse or fine, into a bowl.  Melt coconut oil and
add salt and juice of 2 lemons.  Pour mixture over carrots and
serve. 

*Add walnuts, apples, raisins, etc. if desired
