Stuffed Pepper Soup

Want quick and easy when you get home from work?  Try this recipe for stuffed pepper soup...  For vegetarian's, substitute corn for ground beef!

Ingredients:

  • 3 cups cooked rice
  • 1 lb ground beef
  • 2 cups chopped green peppers
  • 1 cup chopped onion
  • 1 jar (26 oz) chunky pasta sauce
  • 1 (14 1/2 oz) can Italian diced tomatoes (undrained)
  • 1 can (14 oz) beef broth

Preparation:

In a large saucepan cook ground beef, peppers and chopped onion until vegetables are tender and crisp.  Drain excess oil.

Add pasta sauce, diced tomatoes, broth and rice.  Heat thoroughly and serve.
