Tzatziki Sauce

Ingredients:
1 large cucumber
1 cup plain yogurt
3 cloves garlic
1 teaspoon dill weed and a few sprigs fresh dill
1 teaspoon dried spearmint leaves
1 teaspoon vinegar
3 teaspoons olive oil
1 teaspoon salt

Directions:

Peel and quarter cucumber and slice very thinly into a bowl.  Add yogurt and the mashed garlic, salt, pepper, dill and mint, add vinegar and oil and stir.  Garnish with fresh dill.
